We strive to ensure that what we prepare each day for every meal is delicious, beautifully served, therapeutically correct, and healthful. We purchase locally grown, organic vegetables and fruits in season; our fish is always fresh; fine wine is available at dinner. We uphold the standards of the “Slow Food” (as opposed to “fast food”) movement, believing that time, effort, thought, and the highest standards of food buying and preparation are the fabric of fine dining services. We are a health facility; healthful food is at the core of good health. We serve our guests what we would want for ourselves.
